As part of Getting Primal's Paleo-friendly travel snacks feature, the founder of WB Kitchen Chris Feuille was interviewed in order to obtain an inside look into the creation of WB Kitchen's Paleo-friendly food products.

In the mood for cookies or nut bars? WB Kitchen offers various Paleo-friendly snacks perfect for travelling. Cookies with flavours such as maple pecan, brownie, cinnamon raisin, coconut shortbread and nut bars with honey nut and chocolate flavours are some of the samplings you will find in WB Kitchen. All of their products are sweetened with honey and their ingredients do not contain any preservatives or artificial flavours.


What inspired you to start WB Kitchen?

My wife and I started WB Kitchen because we could not find any GAPS friendly products at the store.  We knew that there was a lot of people that made all of their food and that they most likely would like to have the option of purchasing items that they normally make.

What is the hardest part about creating your cookies and bars?

The hardest part is refining the recipes so that they will appeal to large groups of customers. Also when scaling recipes up to larger batches keeping the taste and texture the same can be difficult. You would think that just multiplying the recipe would produce a consistent taste but that is not always true. Also designing products around machinery and packaging equipment can be limiting.
Are you working on any new flavours at the moment?

New flavors are a coffee nut bar and a chocolate chip cookie. The coffee bar is complete but the chocolate chip cookie is still in progress. Trying to make a chocolate without dairy, soy or refined sugars that will hold up in the oven is proving to be difficult.
Can you tell me a bit more about these creations - the process you took to make them, what inspired you to make them? 

I was making cookies and sweet snacks to take to parties and people really liked them and couldn’t believe that they were made with such simple ingredients. They suggested I try selling them at the farmers market, etc.  So we took the plunge and just went for it. We have learned so much already and have so much more to learn. Many different varieties were just requests from friends or family. I personally was resistant to most of them but knew that my taste in snacks was limiting and there was a demand for flavors that I don’t personally find appealing.

What would people be surprised to know about WB Kitchen?

We are in charge of all aspects of our company. We order ingredients, make and package all of our products, use internal sales and demo support. We are still very small.

Any future plans (sneak peeks, teasers, future goals you do not mind sharing)?

We are moving into a new and larger facility very soon. It will be our own space and will house all aspects of the business. Currently we operate out of 3 separate facilities so it will be nice to be in one. We would like to have more products because we have so many ideas but are just taking it one step at a time.

Any other paleo-friendly treat connoisseurs who you admire and can recommend?

I like to eat Nick Sticks, Wild Zora bars, That’s It fruit bars, Evolved Eating chocolate bars, Natural Force Nutritional Supplements, Jackson’s Honest Chips. Most of the stuff we eat we still make ourselves. There are many more great products coming out all the time and it is very exciting to watch and be a part of this movement!
